The Chop Up: How to make Viazi Karai

In this weeks episode of The Chop Up, Miss Mandi makes some mouth watering Viazi Karai/Karanga (deep fried potatoes).

Viazi Karanga/ Viazi Karai are a delicious and flavorful snack that one can make in a matter of minutes. The potatoes are slightly boiled then immersed into a flour and food coloring mixture to give them a yellowish coat and then are fried until crispy. Viazi Karai can be enjoyed with ukwaju (tamarind), as an appetizer or even with the main course.
