On this week’s episode of The Chop Up, Miss Mandi makes githeri and true to her nature, adds a bit of a twist!
To add a mild sweetness to the meal, she substitutes maize for sweet corn and serves the dish with guacamole on toast. To garnish (and add even more flavour) she adds avocado and plantain.
