Here’s how to cook with honey

Hotels and restaurants around the world have been tapping into the all-natural way to sweeten their products by turning rooftops into urban beehives and harvesting the honey for their menus. The latest iconic landmark to join the Grand Palais and the Opera Garnier in Paris, or the Fairmont Royal York Hotel in Toronto, is the Waldorf-Astoria New York, which was recently swarmed with 20,000 new guests on their rooftop.

Here are a few tips and tricks on how to cook with honey at home.

-When cooking with honey, lower the baking temperature by 25°C (77 F) as honey causes baked goods to brown faster.

-Coat measuring cups and spoons with oil or non-stick spray in order for honey to pour out easily.

-Substitute 2/3 (160 ml) to 3/4 (175 ml) cup of honey per cup of sugar in recipes

-Decrease the amount of liquids by ¼ cup (60 ml), per cup (250 ml) of honey used.

-Store honey at room temperature.

-If honey crystallizes, remove lid and place jar in warm water until crystals dissolve. Alternately, microwave honey on high for 2 to 3 minutes stirring every 30 seconds until the crystals dissolve.
